Happy Tuesday my dear readers! This salad was inspired by my need to find a side dish that would be filling yet light and packed full of vitamins. Like my other dishes, this salad is very easy to prepare as you need only a handful of ingredients and 10 minutes to prepare and assemble, provided the lentils are cooked beforehand.
You will need:
1 red onion, 1 cucumber, 2 tomatoes, 1 cup of lentils (cooked beforehand), a few rocket leaves, 1 tablespoon of balsamic vingear, 1 tablespoon of extra virgin olive oil.
Simply chop and arrange however you wish, and pour your dressing over the salad generously. Season to taste and you are good to go!
