Niki’s Baked Aubergines



Hi!  Do you have the holiday blues or are you looking for an exciting mid-week lunch/side dish? Well, my baked aubergines are so delicious and low in fat that you will make this a regular dish! SO simple too 🙂 All you need is…

2 aubergines, halved lenghtways, 3-4 tablespoons of parsley, 2 cloves of garlic (optional if on a date!), 12 black pitted olives (green are fine too!) 1 red pepper (again any color..see the pattern? Flexibility :), 1 onion, 1 celery stick, salt and pepper, 1 tablespoon of olive oil, 1 handful on small cubed bread (any kind), lemon zest for garnish.

Firstly, hull out the bottom part of the aubergines with a spoon and keep the filling aside. Then, brush your aubergines with olive oil and season. Place in a preheated oven of gas mark 4 for 15 minutes…

In the meantime finely chop the aubergines and add to a hot saucepan with the chopped garlic and onion. Add some oil and fry for about 1 minute. Then add the celery and pepper and cook for a further 2-3 minutes. Season well!

Once than has cooked down, turn off the heat and add the olives, bread cubes and half the parsley. Mix well!



Next, bring out your half baked aubergines and stuff them generously with your filling! Pop back into the oven for a further 15-20 minutes until golden brown on top. The result? Utterly captivating to look at and even better to eat! Yummy…
