If you are looking for a sweet treat but want to feel like it’s also doing you some good in the long run, then look no further than my Oaty Berry tray bake! The oats produce long last energy and the berries help cut through any extra richness in the tray bake. Just a few tips….
Whilst baking the tray bake remember to NOT fold in the raspberries into the mixture but just the blueberries. The raspberries should simple be placed on top rather than poking it in with force, they will sink anyway!
See? No need to push the raspberries down at all, they will sink a little anyway 🙂
After you have baked them, let them cool down before dusting it with icing sugar and cutting them into whatever shape you like. I choose the diamond effect….
Please do not underbake or overbake this tray bake as it is prone to going wrong if you do not follow this important step. Bake for 20 minutes on a medium heat and then bake for a further 20-25 minutes covered wit foil. The result? You will get a perfectly cooked and light tray bake with is neither raw nor overcooked:
A delicious and light snack to be enjoyed in the day or perfect as a dessert with a scoop of vanilla ice cream 🙂 I used about 100g of rolled oats but you could add a bit more and even some for the top! Very pretty 🙂
