Good day to you all! A recent trip to a coffee shop inspired me to make these cupcakes. I saw a lemon and poppy seed loaf and was instantly inspired but I must say I wasn’t sparked with enthusiasm when I saw the thick icing that was slathered on top. So, this is my healthy take on the classic pairing of poppy seed and lemon.
If you’re interested in creating this cupcake I strongly suggest you use olive oil instead of butter for extra lightness. I added a few white chocolate chips as well but this is optional.
