Niki’s Country soup

Hey there! Experiencing a warm and hearty soup is one of my favourite sensations when it comes to eating in Autumn. My hearty soup is sure to not only warm you up but also to keep you full and energised for the rest of the day. I often find that soups which promise to be hearty and wholesome are packed full of calories and actually leave you rather sluggish afterwards. So here’s my take…

 
All you need is a couple of carrots, a handful of lentils, three medium sized tomatoes, fresh coriander, some parsley, one large onion, two cloves of garlic, cumin, turmeric, salt, pepper and some pasta (any small shapes would do). All in one pot, cover with two cups of water and summer for a few hours. Simple as that! 
You end up with this deliciously thick yet not overpowering soup which has the sweetness of carrots yet the savouriness of the herbs, onion and lentils. Mmmmm….
