Niki’s Walnut and Leek Fritters


Hey there my dearest readers,

since my last post I am so grateful to say that I have been awarded the versatility blogger award for 2013 by my fellow blogger, Fae’s Twist and Tango. This is an award I will always hold dear and I would like to thank you, the reader, for continuing to follow me. I hope to continue progressing in the wonderful world of food.

Now onto my Walnut and Leek Fritters…

Christmas is fast approaching us (yippie!-I love Christmas) which means hot and hearty food…My Walnut and Leek Fritters are so so heart warming and filling, they will not make you feel like you are eating deep fried food. The leeks cut through the richness of the Earthy walnuts and they marry together perfectly. I often serve this side dish with plenty of green herbs and tomatoes with a strong lemon dressing. Also, I use light olive oil for frying and I make sure the leeks have been soaked in warm water before adding to the batter.


If you take a look inside the fritter, it is further proof that they are so incredibly light, crispy on the outside and soft and fluffy on the inside. Simply make your normal fritter batter and add these extra food items, you will not regret this one by any means!
