Niki’s Mini Dolmas

Hey everyone!
I have the perfect dish up my sleeve to impress that date you have coming up for Valentine’s day or just easy dining at home. My mini dolmas are authentically Mediterranean and versatile. I have presented the vegetarian option here but you can easily try the meat version by adding in some minced meat or shredded chicken.

Next time you’re at the local market, why not pick up some bell peepers, I was inspired by these green mini variety but you could of course use the classic red, yellow, orange and green bell peppers, just allow more time to bake.

Simply, make your normal couscous and add in some spice, diced onions, carrots and mushrooms. I added some finely chopped olives, herbs and light feta to add that authentic Mediterranean touch. Also, paprika and cumin work very well in this mixture. Make sure your oven is pre heated on medium-high so once you’ve stuffed your peppers, you simply need to season well and drizzle some olive oil, ready for the oven. Bake for 15-20 minutes until the peppers have charred. I hope you enjoy a slice of the Mediterranean in this chilly weather!
