Niki’s Fiery Red Pesto Chicken

enjoying the Summer everyone? I hope you are soaking up the rays (well when the sun is out!!) and are trying new and healthy dishes. My fiery red pesto chicken is a winner dish when it comes to creating something a little different in the kitchen. The best part? Easy.Quick.Tasty.Interesting…and wait for it…HEALTHY! See? Okay I am so tempted to say ‘winner winner, chicken dinner….’ and I am sure you are now too!


Okay, to serve 4 I simply use 2-3 medium chicken breasts, cut into bitesize pieces, 1 medium thinly sliced red onion, handful of mushrooms, 2 cloves of garlic, juice of one lemon, pinch of paprika, 1 small jar of red light pesto sauce, basic seasoning, 1 tablespoon of olive oil. You can serve the chicken with some noodles or rice.


Simply, lightly fry the onions until softened. Add your chicken (medium-high heat) and cook gradually.  Season well and add the minced garlic. Once the delicious aromas hit you, add your paprika and turn up the heat. After about 5 minutes, add your red pesto and some chilli flakes if you like it really hot! Garnish with some toasted pine nuts and enjoy! The texture is so sumptuous and moorish, I promise you will enjoy every bite!
