Niki’s Spanish Chickpeas



Hola, ¿cómo estás?
In this weeks entry, I have decided to take a trip to Espania to add some mouth-watering flavours to some ordinary chickpeas. Why did I chose this ingredient I hear you say? Well, aside from the fact that they’re good for us, they have a lovely soft texture if cooked properly. My Spanish inspired chickpeas are so easy and quick to create not to mention the fact that they’re very affordable too, happy days!
Now the key ingredient here (aside from chickpeas of course!) is smoked paprika. It adds such depth of flavour and a slight hint of sweetness to your dish.
You simply need to cook off some spring onions, garlic, smoked paprika and cumin seeds in some olive oil for about five minutes over a medium heat. Next, add your drained chickpeas and turn the heat up. Add your seasoning and your tomato purée . Then, add chopped red pepper to the pan and after a further five minutes, add ya tin of chopped tomatoes. Stir all of this together and simmer for a minimum of 30 minutes. Serve with some delicious farmhouse bread or white cooked rice.
