Niki’s Leek and Potato Soup

Happy Friday guys!

Yes…I have found the world’s easiest and quickest soup in existence: Leek and Potato. Truly delicious and all you need is six ingredients! That’s right, SIX! Furthermore, it is so good for you as it has not only been cited as a hybrid vegetable but leeks also contain  kaempferol, a flavonol that may help fight cancer and lower your risk of chronic diseases including heart disease, happy days!

All you need is 2-4 medium size potatoes (roughly chopped), 2-3 leeks (thoroughly washed and roughly chopped), 1 medium onion, two cloves of garlic, again roughly chopped, 1.5 cups of vegetable stock and full seasoning. All you have to do is heat 1 generous tablespoon of good quality olive oil and soften the leeks and potatoes for about 5 minutes. Season well and add your onion and garlic, turning the heat up. After a further 2 minutes, add your vegetable stock and simmer gently. I like to blend my soup to a rough consistency as I love the texture but by all means you may choose to blend further or not at all!
