Granola. How many varieties can you count? I am personally overwhelmed by the choices available to us…but is that a good thing? I picked up a random granola bar and read the contents. I was really appalled at the sugar and saturated fat content; it actually contained more sugar than a standard chocolate bar! So…I decided to take matters into my own hands and share with you my own healthy, easy and quick recipe to try at home. No hidden ingredients or sweeteners…all natural goodness!
All you need is: 1 cup of rolled oats, handful of pecans and almonds (crushed), 200g of pumpkin, sunflower and sesame seeds, ½ cup of raisins and dried cherries (chopped roughly), 200g desiccated coconut, 1 tsp of cinnamon, ¼ cup of honey and ¼ cup of coconut oil.
In a large bowl mix the rolled oats, nuts, seeds and dried fruit along with your desiccated coconut and cinnamon. In a small saucepan gently heat the coconut oil and honey and melt together delicately. Once cooled, combine the two elements thoroughly and spread onto a Swiss roll pan which has been greased before and lined with parchment paper. Bake for 15-20 minutes on a medium heat or until lightly golden brown (beautiful smells will waft around your house!).
TIP: DO NOT ATTEMPT TO CUT INTO BARS UNTIL COMPLETELY COOLED!
